Serves 4
Ingredients
Turkey steaks
•Oil for greasing
•4 turkey breast steaks
•Salt and freshly ground black pepper
•125g/5oz dried white breadcrumbs
•65g/2 ½ oz Gruyere cheese, grated
•65g/2 ½ oz ground walnuts
•125g/5oz butter, softened
•Chopped walnuts and parsley sprigs to garnish
Madeira jus
•200ml/7floz Madeira
•2 tsp concentrated liquid beef stock
•50g/2oz unsalted butter

Method
•Preheat the oven to 200 C/ 400 F/ Gas Mark 6. Arrange the turkey steaks on a lightly oiled large baking tray and season each with salt and pepper.
•Place the breadcrumbs, cheese and walnuts together in a food processor and quickly blend until well mixed. Add the butter and blend
•Top each turkey steak with mixture lightly pressing to cover . Bake on the top shelf of the oven for 15 minutes or until the turkey has cooked through and the topping is lightly golden
•Bring half the Madeira to the boil and simmer until reduced by half. Add the remaining Madeira, return to the boil then simmer until reduced by half again
•Remove from heat and stir in the stock. Gradually whisk in the butter until blended. Return to the heat and simmer, stirring, until the jus has thickened slightly and is glossy.
•Serve with a sprinkling of chopped walnuts. Spoon over the Madeira jus and garnish with a few sprigs of parsley.
